Quick Damper Rolls:
- 3 cups self-raising flour
- 1 tsp salt
- 1 tbsp native mountain pepper
- 1 cup milk
- 1/2 cup water
- 2 tbsp olive oil
- 4 good quality sausages
- 2 large onions, thinly sliced
- 2 tbsp butter
- 1 tbsp Davidson plum vinegar (or balsamic)
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 onion, finely diced
- 2 cloves garlic, minced
- 2 cups cherry tomatoes
- 2 tbsp ground bush tomato (or tomato paste)
- 1 tbsp brown sugar
- 2 tbsp apple cider vinegar
- Preheat oven to 200°C (400°F)
- Mix flour, salt, and mountain pepper in a bowl
- Combine milk, water, and oil, then add to dry ingredients
- Knead briefly until smooth
- Shape into 4 rolls
- Bake for 15-20 minutes until golden
- Meanwhile, caramelize onions in butter for 15-20 minutes
- Add Davidson plum vinegar to onions
- Grill sausages until cooked through
- For chutney: Sauté onion and garlic, add remaining ingredients, simmer 15 minutes
- Split rolls, add sausage, onions, and chutney
