- 1 tsp (5g) chili powder
- Salt and pepper, to taste
- 8-10 corn tortillas
- Optional toppings: sour cream, chopped cilantro, sliced avocado
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium-high heat until browned. Add the chopped onion and minced garlic, and cook until the onion is translucent.
- Add the enchilada sauce, diced tomatoes, chopped green chilies, ground cumin, and chili powder to the skillet. Stir well and let the mixture simmer for 5-10 minutes.
- Spread a thin layer of the beef mixture in the bottom of a 9x13 inch (23x33cm) baking dish.
- Warm the corn tortillas in the microwave or oven, then place a spoonful of the beef mixture in the center of each tortilla. Roll up the tortilla and place it seam-side down in the baking dish. Repeat with the remaining tortillas and beef mixture.
- Once all the tortillas are in the baking dish, pour any remaining beef mixture over the top of the tortillas. Sprinkle shredded cheddar cheese evenly over the top.
- Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Remove the enchiladas from the oven and let them cool for a few minutes. Serve with your favorite toppings, such as sour cream, chopped cilantro, and sliced avocado.
