Mushroom Salad
1lb mushrooms, sliced in half
Preheat the oven to 350. Line a baking sheet with parchment paper and add the mushrooms. Season lightly with kosher salt and roast for 15-20 minutes, until mushrooms have lost moisture but not dried out completely. Remove from the oven.
Olive oil
1 tsp each kosher salt, paprika
½ tsp smoked paprika, black pepper, sugar
Mix all spices in a small bowl.
Heat a saute pan over medium. Add a splash of olive oil, followed by the mushrooms (they may sizzle if they’re wet from the oven. Let them dry out a bit or squeeze them when cooled to remove a bit of water). Add the spice mixture (as much as you like) and reduce heat to low. Continue to cook for 3-5 minutes until warmed through but not wildly hot. Cut the heat and transfer mushrooms to a small plate to cool.
1 large handful arugula
¼ head red leaf lettuce, washed and roughly torn
8-10 leaves basil
Pile the greens onto a large cutting board. Use your chef’s knife to roughly chop the greens, 4-5 times, until any large leaves have been cut into more bite-sized pieces. Transfer the greens to a large mixing bowl.
6-8 pieces cherry tomato, cut in half
3 tbsp olive oil
2 tbsp red wine vinegar seasoned with ½ tsp sugar and ¼ tsp kosher salt
Add the tomatoes and cooled mushrooms to the mixing bowl. Add the olive oil and red wine vinegar and mix lightly with your hands. Transfer the greens to the serving bowl of your choice.
Croutons (either store bought, or toast your own - slice off a piece of your favourite bread and toast, then cut into squares and season with ½ tbsp olive oil and a pinch of kosher salt.
Pile on the croutons, and enjoy!
