In the latest episode of the OneDevon Podcast, I caught up with chef Jude Kareama, Chef patron of the Kota and Kota Kai restaurants in Cornwall.A well-respected chef, Kareama has won a plethora of awards including Two Rosettes by the AA, a Bib Gourmand from The Michelin Guide, as well as being recognized by many Eating Out guides including The Good Food Guide, The Trencherman’s Guide and Harden’s Restaurant Guide.The Kota restaurant was also named in The Telegraph as one of The Top 50 Summer Restaurants in Britain in August 2009.Born in New Zealand, he combines modern approach with styles adopted from his Maori and Asian roots.You may also recognise him from BBC show Great British Menu.Kareama was speaking to the OneDevon Podcast in the Deer Park Hotel in Honiton where he was cooking alongside a number of well-renowned names.Here, he spoke about his influences, developing future talent and why he’s against the ‘bully culture’ in the kitchen.He also revealed where his favourite Devon restaurants were.
