    Chatting with today’s guest, I never imagined celiac disease would come up. But then he dropped a bombshell I had never heard before. He told me that wheat used to have only 14 chromosomes, and that today’s wheat has 44 chromosomes. First of all, what the heck is a chromosome? Plant chromosomes are like instruction manuals, guiding how a plant grows, develops, and reproduces. Here’s the twist: chromosomes shape plants, we eat those plants, and they end up shaping us too! What I discovered from today’s guest, Farmer Tim, is that our bodies can easily digest wheat (ancient grains) with 14 chromosomes but struggle to process wheat with 44 chromosomes. What does this have to do with our health or cancer prevention? When your digestion falters, inflammation rises. More inflammation means more chances for disease to sneak in. Looking back, my own digestive battles before my cancer diagnosis make me wish I’d known all this sooner.     In 2019, I became very ill. I experienced severe reflux, which made my voice raspy and left me with a constant sore throat.
