    Mom's Fluffiest Pancakes

    INGREDIENTS:
    Pancake mix (we use Bisquick)
    1 tsp Vanilla Extract
    1 tsp Pumpkin Spice
    1-2 Eggs, slightly beaten
    1-2c Milk
    Syrup, to taste

    INSTRUCTIONS:

    1. Follow boxed instructions based on serving size desired.
    2. Add egg and milk. Stir. Should be pourable but thick.
    3. Stir in vanilla extract and pumpkin spice.
    4. Cook on a buttered or oiled pan until browned on both sides.
    5. Top with syrup or other choice toppings.

    Fried Rice

    INGREDIENTS:
    Leftover cold, white rice (2-3cups)
    2eggs (scrambled)
    Diced Chinese sausage or Spam (pan-fried)
    Frozen peas & carrot mix (1cup) OR frozen mixed veg (1c)
    1/2 a sm. sautéed onion (optional)
    Seasonings: soy sauce, dark soy sauce, oyster sauce, sesame seed oil

    INSTRUCTIONS:

    1. Defrost frozen veg in warm water & drain.
    2. Scramble the eggs & chop into small pieces.
    3. Pan fry meat & onion, set aside.
    4. Heat 1Tbsp veggie oil in lrge pan, add rice & stir 2-3min, add in seasonings, about 3Tbsp each of soy, dark soy, oyster sauce & 1 Tbsp sesame seed oil.
    5. Stir fry to coat all the rice, then add the rest of your ingredients.
    6. Stir fry another 3 min.

    Schmarn

    INGREDIENTS:

    1 1/2 c. Semolina
    3/4c. Flour
    1 1/2c. Milk
    1/2 c. Cottage cheese
    4 eggs, slightly scrambled

    INSTRUCTIONS:

    1. Mix semolina, flour, and milk in a large bowl.
    2. Add eggs and cottage cheese. Stir.
    3. Pour into pan on med-high heat.
    4. Let it cook until the bottom is firm

    Tortellini Soup
    Yield: 6 servings
    Prep Time: 10 minutes
    Total Time: 35 minutes

    INGREDIENTS:

    1 (24 ounce) jar marinara
    4 cups (1 32 ounce box) vegetable or chicken stock
    Salt and pepper, to taste
    1 (20 ounce) refrigerated package cheese (or any flavor) tortellini
    1 (5 ounce) container baby spinach
    Freshly grated parmesan cheese, to garnish
    Fresh basil leaves, to garnish
    Crushed red chili flakes, optional to garnish

    INSTRUCTIONS:

    1. In a large pot over medium-high heat, add the Marinara and stock and season with salt and pepper to taste. Stir everything to combine and bring to aboil. Reduce the heat to low and cover to simmer for 7-8 minutes.

    2. Add the tortellini and simmer for another 5-6 minutes or until the tortellini are cooked through. Turn off the heat and add the whole container of spinach and stir until wilted.

    3. Transfer the soup among bowls and garnish with freshly grated parmesan, fresh basil leaves and crushed chili flakes.

    4. Enjoy!

    Grandpa's Macaroni and Cheese

    INGREDIENTS:

    Rigatoni Noodles
    1 can of Cream of Celery Soup
    Small block of Velveeta (chopped)
    Small block of White Sharp Cheddar Cheese (shredded)
    Small Yellow Onion (chopped)
    3-5 Celery Stock (chopped)
    Stick of Butter
    Salt
    Pepper
    Ground Mustard
    Milk

    INSTRUCTIONS:

    1. Cook noodles in boiling water to al dente.
    2. In a separate pan, melt butter.
    3. Sauté onions and celery.
    4. Mix in celery soup, milk, and cheese.
    5. Mix until cheese is melted and mixed in.
    6. Add seasonings to taste.
    7. Mix

    Portobello Pizzas

    INGREDIENTS:

    6 Large Portobello Mushroom Caps

    1 jar Marinara sauce

    Italian Seasoning (optional)

    1 8oz Package Shredded Mozzarella Cheese

    Chopped Fresh Basil

    Pizza Toppings of Choice

    INSTRUCTIONS:

    1. Preheat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper (rimmed is important because the mushrooms release juices during cooking)

    2. Prepare mushroom caps by removing/discarding stems, rinsing and patting dry (paper towels or a dark towel recommended because the mushrooms can stain light towels)

    3. Place mushroom caps gill side up on baking sheet and spoon on a thin layer of marinara sauce onto each cap. Spread sauce with back of spoon. Sprinkle with Italian Seasoning for added flavor (optional).

    4. Sprinkle toppings evenly across mushroom caps. Cover each mushroom with a generous layer of shredded mozzarella cheese. Garnish with fresh basil.

    5. Bake for 10-15 minutes, until cheese is melted and beginning to brown, and mushrooms are tender when pierced with a fork.

    6. Serve with a side salad and enjoy!

    Taco Night

    INGREDIENTS:

    1lb ground meat of choice
    Taco seasoning
    Bag of Frozen riced cauliflower
    1/2c Chicken Stock
    Crunchy Taco Shells
    (Optional)
    Ellis' twist - cooked chicken nuggets per bag instructions
    Shredded lettuce
    Shredded cheese
    Sour cream
    Diced tomatoes
    Bag of nacho cheese Doritos for crumble topping

    INSTRUCTIONS:

    1. Oil pan and brown meat
    2. Season with taco seasoning
    3. Add riced cauliflower and chicken stock. Simmer until cauliflower is cooked and sauce thickened.
    4. Dress tacos with desired toppings and serve.
